Chocolate Sugar Cookies Recipe: Delicious Cut-Out Cocoa Cookies

So everyone likes sugar cookies, right? They’re not always the most exciting cookies, but when you have a really good one, it totally hits the spot.

But you know what does make sugar cookies go up a few notches in the excitement factor? Chocolate! Obviously. 😉

These chocolate sugar cookies are what you would get if traditional sugar cookies and brownies had a baby… i.e.: DELICIOUS. They’re rich enough to not need any frosting, but it can still be fun to add a little bit for decoration anyway.

I found the recipe a few years ago over at Sweetopia and like to bust them out for holidays and such.

I especially like to make them around Halloween (add some orange decorations and you’re all set!) and Valentine’s Day (because chocolate, duh), but honestly they work great any time of year.

So bust out that cocoa powder and let’s get making!

Chocolate sugar cookies recipe to cut out

First, cream together 2 cups of softened unsalted butter with 2 cups of sugar just until everything is incorporated. No need to get it all fluffy for these cookies.

Next, beat in 2 eggs and 1 tablespoon of vanilla.

Mix in 4 cups of all-purpose flour, 1 ½ cups cocoa powder, and 1 teaspoon of salt just until it all clumps together into a dense dough. Flatten the dough into a disc (ish) and wrap in plastic wrap. Refrigerate for at least an hour—this will help prevent the cookies from spreading too much and losing their shape while baking.

Preheat the oven to 350 degree Fahrenheit.

Roll out the chilled cookie dough to about ¼ of an inch thick and cut out.

Place on ungreased sheet pans. At this point, you can put the cut-out cookie dough back in the fridge until it’s extra firm (about 10-15 minutes) before baking if you want to ensure the edges stay as neat as possible, but it’s not necessary.

Bake for 8 – 12 minutes, or until the center of the cookie looks firm.

Let cool, then you’re free to dig in to your chocolate sugar cookies or decorate them! And then dig in. 😉

Chocolate Sugar Cookies to Cut Out (Making With Megan)

Ingredients
  

  • 2 cups unsalted butter, softened
  • 2 cups sugar
  • 2 eggs
  • 1 Tbsp vanilla extract
  • 4 cups all-purpose flour
  • 1 1/2 cups cocoa powder
  • 1 tsp salt

Instructions
 

  • Cream the butter and sugar together just until well incorporated. It does NOT need to be fluffy.
  • Mix in the eggs and vanilla.
  • Add the dry ingredients (flour, cocoa powder, and salt) and mix until everything is incorporated. You should have a dense dough that clumps together.
  • Pat the dough in to a disc shape, wrap in plastic wrap, and refrigerate for at least 1 hour.
  • Heat oven to 350°F.
  • Roll out the dough on a dry surface (floured, if needed) until it's about 1/4 inch thick. Cut out cookies and place on a ungreased sheet pan about an inch apart.
    You can put the cut out cookie dough in the fridge again until it's extra firm (about 10-15 minutes) before baking if you want to make the edges as neat as possible, but it's not necessary.
  • Bake for 8–12 minutes or until the cookies are firm in their centers.
  • Allow to cool. Enjoy!
  • Makes about 30–40 medium cookies.
