I’ve never really gotten into doing pranks on April Fools Day, but creating fun fake-out food? Yes please!
I’m going to share with you one of my family’s favorite April Fools dinners from years past. It’s not only super easy to make, but it’s also actually really tasty, too!
So what is this silly dinner you ask?
Cake for dinner and meatloaf for dessert!
The cake for dinner is actually meatloaf and mashed potatoes! I use this super, super easy recipe for the meatloaf and just bake it in an 8-inch cake pan.
Then I “frost” it with mashed potatoes using a large piping tip (I used a #828 star tip). The secret to making this work is using super smooth mashed potatoes.
How do I make super creamy and smooth mashed potatoes?
Use a potato ricer! These little doohickeys ensure that your mashed potatoes come out completely lump-free so nothing clogs up your piping tip!
Simple place boiled potatoes inside and press the potato ricer closed—like you’re playing with a play dough toy. 😉
Do that until you’ve riced all of your potatoes and then beat in some milk, butter, seasonings, whatever you usually add to your mashed potatoes.
Add on some more fun prank foods…
And no April Fools dinners is complete without fake punch (it’s really Jello)! I guarantee that even once your kids realize it’s Jello, they’ll still try to suck it up from the straw, haha!
And now for the meatloaf dessert plate!
And since you had “cake” for dinner, why not have some “meatloaf, mashed potatoes, and veggies” for dessert?
The meatloaf is made from chocolate rice krispie treats and the mashed potatoes are smushed up cheesecake with caramel sauce on top. The veggies are just cut up orange Starbursts and green Runts candies.
